This is my first time to post on Menu Plan Monday, and I’m really excited about it! I usually plan my menus two weeks in advance, but I will just include this week’s.
Monday – Salmon, Roasted Potatoes, Green Beans
Tuesday – Whole-Wheat Spaghetti w/ homemade pasta sauce, homemade bread, and Mother’s Meatballs (recipe below).
Wednesday – Homemade Chicken Noodle soup in the Crockpot and cornbread
Thursday – Tuna patties, Cheesy Potatoes, Corn
Friday – Leftovers, salad
Lazy Saturday – Pancakes!
Mother’s Meatballs
1/4 cup rice (I use brown)
1 lb turkey or hamburger meat
Salt
Pepper
Onion, chopped
1 egg
3/4 cup ketchup
*Mix ingredients and spray 13×9 baking dish with Pam. Roll in balls and bake at 350 for 45 minutes.
