Quick & Easy Breakfast Casserole

I am typically not a casserole fan. Except when it comes to breakfast. Oh yes, there is nothing better than warm egg-y, cheesy, baked goodness in the morning.

I have been making this particular casserole for years to share at MOPS meetings. The food of course, is a big reason I have enjoyed MOPS for the last seven years. 😉

I usually throw this together in about ten minutes, but this can also be made the night before and then moved from the fridge to oven in just a few seconds.

This is what our family prefers, but you can easily adjust the amounts to suit your family’s tastes.

Casseroles are such a frugal and easy way to feed a large group of hungry moms. Enjoy!

    I am not a meat eater but my family loves this recipe. I make it ahead at least once a month on Friday and heat it up on the Sabbath so I am not in the kitchen cooking and can rest and study on Sabbath out of the kitchen! It is quick and easy and a tummy pleaser! Thanks for sharing!

    You can also get by with less eggs and more milk, especially if you make it the night before and keep it in the fridge for all the liquid to soak up into the bread. YUM! Thanks for sharing your recipe!

    I love this dish. Its especially good because you do most of the work the day before, so you can just throw it in the oven while you are getting ready in the morning.

    This recipe is awesome! Thanks so much for posting. I made it for my church one Sunday. It was a big hit!.

    Also, I”m a college student and decided to try making a one serving size casserole in the microwave at my dorm. Worked amazingly well. 😀

    I make something very similar to this, except I am lazy and don’t cut up the bread- just layer it in there kind of like shingles on a roof 🙂 I also use whatever leftover ham, bacon, or sausage I have on hand. I’ve even used shredded chicken and some bacon and it turned out so yummy! The cheesier, the better!

    This has been what our family calls Christmas breakfast for as many years as I have been alive…so at least 33…lol…with slight variations on the recipe, my mother has made this a very special meal for us….up until a few years ago, I thought it was her own recipe…haha, and I thought you could only eat it for Christmas morning!!! But either way, whenever you eat it and however you eat it…it’s delicious and I can never get enough!!

    My question is if i were to cook this on a Thursday and reheat it on saturday morning, will it still be good? and will the bread hold up that long. I get married on June 23 and we plan on preparing our Saturday morning breakfast the thursday before…
