Tater Tot Casserole {with NO cream soup!}

One of my childhood memories includes Tater Tot Casserole made by my sweet Gigi. There is something about a grandmother’s cooking that cannot be replicated, no matter how hard one tries.

A few months ago, I stole Gigi’s recipe from my mom, and I just now got around to looking at it last night.

These days, cream of something-or-other soup isn’t found in our pantry, and some of the better-for-you copycat cream soup recipes are a little more complex than I wanted to mess with, so I nixed the “cream” and went with creamy. The result was full bellies and a happy family begging for more. I’d call that a win.

    Thank you! I made this tonight for dinner. We loved it! My husband wasn’t sure it sounded good, but when I asked if he liked it after, also what could be done differently he said it was on point and nothing needs changing.
