Candy isn’t something I make a lot of, but my husband always enjoys it when I do! This is a fun and easy version of an old favorite… homemade Almond Bark! My recipe has a twist, however, using my wonderful Young Living essential oils.
Peppermint Bark
- 1 pkg White Almond Bark
- 1 pkg Chocolate Almond Bark
- 1 drop Young Living Peppermint Vitality Essential Oil or 1 tsp Peppermint extract
- 4 – 8 crushed Candy Canes or 10 – 15 Peppermints
Cover a cookie sheet with parchment or wax paper.
In a double boiler*, heat chocolate almond bark until completely melted. Add one drop of the Peppermint Vitality essential oil and stir well. Carefully pour onto your prepared cookie sheet and smooth out with a spatula. Transfer cookie sheet to the freezer while you prepare the top layer.
Wipe out the top of the double boiler, and then add the white almond bark, heating until completely melted. While heating, add candy canes to a Ziploc bag and crush with a rolling pin. Remove the chocolate layer from the freezer, and carefully smooth the white onto the chocolate. Top with crushed peppermints or candy canes, and return cookie sheet to the freezer until set, about 10 minutes.
Break into pieces and serve with a tall glass of milk! Store in an airtight container. For a fun and tasty gift, serve in a Christmasy tin or place in a treat bag and tie with a pretty ribbon.
Variations:
White Chocolate-Peppermint Bark
- 2 pkgs White Almond Bark
- 1 drop Young Living Peppermint Vitality Essential Oil
- crushed Peppermints or Candy Canes
Prepare as directed above, without the first freezer time. You might let it set longer, about 15 minutes to make sure the middle is hard.
Chocolate-Peppermint Bark
- 2 pkgs Chocolate Almond Bark
- 1 drop Young Living Peppermint Vitality Essential Oil
- crushed Peppermints or Candy Canes
Prepare as directed above, without the first freezer time, again allowing a little bit longer to make sure the middle is good and set.
Candy Cane-less Bark
- 2 pkgs any variation of Almond Bark
- 2 drops Young Living Peppermint Vitality Essential Oil
Prepare as directed above, and if using both kinds of Almond Bark, put the chocolate in the freezer as directed in the main recipe. Prepare the white almond bark as directed above, adding the second drop of Peppermint Vitality essential oil after the almond bark is completely melted. Stir well and smooth on top of the chocolate layer. Return to the freezer until set. {You could add crushed peppermints or candy canes before freezing, but the result will be very pepperminty!}
*For a double boiler, I simply use two pans, the bottom one filled with water. It works just as well as a “real” double boiler!
This recipe is husband- and kid-approved! Even Cam enjoyed a little, without the crushed candy, of course.
