
I must be doing something right. One child adores asparagus. Seriously! She will eat a whole plate of spears like they are french fries. The other child? Not so much.
Sara knows that when we find asparagus on sale, we buy it. With Spring right around the corner (I hope!), now is the time to look for great prices on the stalky green vegetable. It can be pretty pricey!
Did you know? Asparagus contains lots of folate, as well vitamins E, A, and C. It also contains potassium, which helps lower blood pressure and perhaps even cholesterol.
I have seen it recently for as low as 99 cents a pound. This is one “treat” I don’t mind splurging on, but buying it in season works for me!
Did I mention she also loves artichokes? 😉

Everyone kept raving about Ree’s recipe for roasted asparagus. So tonight, I tried it for the first time. Amazing! Totally different, and delicious. Thanks for the suggestion! 🙂
Oh my goodness! It’s nice to see that my little girl is not the only child in the world who loves asparagus and artichokes – throw in some various squashes and fennel and you have her perfect meal!
Our kids LOVE asparagus! It’s a huge treat, but we normally have to make AT LEAST 2 lbs at a time because everyone loves it so much (and there are only 6 of us eating – the baby’s not quite ready). We drizzle it with olive oil and a lot of lemon juice, sprinkle with salt, pepper and crushed red pepper and bake it at 425 for 15 min. or so (turning half way). DELICIOUS!

I have three spears starting to come up in my garden. My children and I are very excited! We love asparagus!
A splash of balsamic vinegar along with the olive oil makes it really yummy!
I like to grill asparagus with a little olive oil and kosher salt. The kiddos eat it up!

The only way my sisters loves Asparagus is slowly steamed in olive oil and then lightly “salted” with Parmesean cheese.
Ha Ha I had to laugh when I saw your post because I just picked some up at a seafood market this morning. We have not eaten it in way to long. Parmesean cheese, olive oil & asparagus…oh yea! Looking forward to dinner:>)

There’s not much better than fresh asparagus straight from the garden. In fact, when we had a garden and were growing it, it rarely made it into the house! We would just snap-and-munch, snap-and-munch. Unfortunately I think we have a while before it’s in season here in Ohio.
I adore asparagus! Anyway you fix it…I love it. The hubby will eat it…but my two boys…nope…they won’t touch it with a ten foot pole. Oh well, that jut means more for me! LOL!

I got my son to start eating it when he was younger by telling him the old – it makes your pee smell – which it does and he could not wait – definitely a boy thing, but he still eats it – LOL!!

Oh my goodness, that is very clever! My little guy is too young for that trick, but I guess I have that to look forward to in a few years. Haha!
Mmmm! Our kids all love asparagus and broccoli is an all time favorite. Our 3 year old asked for broccoli for breakfast the other morning, of course I let him have it.

My 7 and 2 year old boys love asparagus or basically any kind of vegetables except mushrooms..which i “mash” them so they dont see it in their food when a recipe calls for them!
My kids are the same way. When I serve it, my 1-year-old will eat asparagus and only asparagus, ignoring all the other food on his plate. My 2-year-old won’t touch it. Yesterday, I tried cooking it differently…I brushed it with an olive oil and herb mixture and then grilled it on the George Foreman grill. It turned out really good, but in retrospect I should have sprinkled it with salt too.
